When baking, I will always use unsalted butter. Why? Because salted butter has differing levels of salt and moisture context in each stick, so you have less control over the final product. I prefer unsalted butter because I can regulate the amount of salt in baked goods and I am not adding additional moisture. This helps keep them consistent every time. If you only have salted butter on hand and really want to make this recipe, just reduce the salt in this recipe ¼ tsp. The cookies may be slightly saltier, but they will still be delicious.
